The Story Behind Mindy's Famous:Tomato Pie

'The Friendly Market Tomato Pie'

"The Market opened in 2008 and I was a Wednesday and Saturday vendor. I set up in a tent with my friend and fellow baker Sandy Dunn. There were also a few others bringing baked goods. Sandy had the best baked goods, and the ones you would expect, all wired. She has a personality too that people naturally gravitate towards. Not to duplicate what she had or step on anyone else's toes I quickly realized I needed to be a little different with my foods. I had established a little following with Crack Pie, Betty Ballou's and some breads after a few weeks. There seemed to be a lot of sweets and hardly any savory items from any of the bakers at our market. So I started with a new focus to create a savory pie for the market. Something good, different and reliable. My first thought was my Mom's Tomato Pie. It was a pie she would do at the end of the summer. Lots of tomatoes, onions, high quality cheddar cheese, her homemade mayonnaise, fresh basil, and crushed captains wafers ( her signature topping on a lot of dishes). If she was serving it immediately she would skip the pie crust. If she was making them to freeze for later in the year she would pile it all into a pie crust. The pie always tasted good and like summer. It held up great despite being frozen. The only real problem was I did not have a written recipe. I remembered how it looked and how she layered everything. She did not chop anything. I set out to try to duplicate it. It smelled wonderful but seemed messy.Tasted unreal good but needed a lot of tweaking. We used the best ingredients we could find: Romas, sweet onion, fresh basil, our own house Mayonnaise, our seasoning blend (which makes all our foods drastically different and super good), a NY style sharp cheddar, and crushed Ritz. We organized it better and it came out with the same great taste and less mess. I researched everywhere for Tomato Pie. Found a few recipes (which I had no interest) and no one making it any where ( which is what I was hoping for). Seemed risky but worth a try to bring it to the market. The first Saturday I had 4. No one had ever heard of it. Everyone was intrigued. They sold to the first four people who asked about it. The next week I did 12 and they went super fast with me explaining what the pie was. Every week more pies and selling out quick. Tomato Pie was an instant hit and we were the only place to have it. Very proud we introduced Tomato Pie to this area and even more proud our staff makes so many each and every day at the highest level of quality, taste and consistency. I have had a lot of versions of Tomato Pie since we first introduced it in 2008, and I like them all. Ours is my favorite and so different than any others I have tried. It has helped us build the kitchen and the corner. It is a well earned trademark and will always help define The Friendly Market in the tastiest way."
